Growing it

  • ProtectionMove a potted bay into shelter, or wrap the pot, in a hard winter. The roots in a container freeze far more readily than roots in the ground, and that — rather than the air temperature — is what kills bay trees in Britain.
  • PruningClip in summer to keep the shape. Bay tolerates hard pruning and regrows from old wood, so a neglected plant can be brought back rather than replaced.
  • WateringA bay in the ground needs watering only in its first two summers. A bay in a pot is a different plant entirely and is the commonest bay to die: a thirty-litre container holding a mature evergreen dries out fast in summer wind, and the damage shows weeks later as brown leaf edges and leaf drop. Check by weight or by pushing a finger deep into the compost, soak it thoroughly when it is dry, and keep watering lightly through mild winter spells — a pot can dry out in February wind while nobody is looking.
  • FeedingA bay in open ground needs no feeding. A clipped bay in a pot does, because it is being asked to replace the growth you keep cutting off from a fixed volume of compost: give a balanced liquid feed monthly from April to August, and top-dress with fresh loam-based compost each spring. Yellowing older leaves on a potted bay usually mean exhausted compost rather than disease.
  • HarvestingPick leaves in any month — this is a genuinely year-round herb. Take mature leaves rather than the soft pale new ones at the shoot tips, which have far less flavour, and pick from all round the plant so a clipped shape stays even. Leaves dry well and are one of the few herbs that many cooks prefer dried.
  • PropagationTake semi-ripe cuttings of the current season's growth in late summer, about 10 cm long with a heel, and root them in gritty compost in a covered propagator. Bay is slow and unreliable to root — expect a good proportion to fail and take more than you need — but a rooted cutting makes a plant that will outlive most of the garden.

Not a windowsill crop. The reason is given — usually light, root volume or sheer size. It is a shrub. A bay wants a cool winter rest and steadily drops leaves in warm dry indoor air, where it also picks up scale insect that is very hard to clear.A bay in a pot by a door is a good plant. Growing it without soil

Nearly anything can be grown in a soilless system by somebody with enough equipment. The useful question is whether it is worth it, in which technique, and what goes wrong.
