Growing it

  • ProtectionMulch the crown thickly in late autumn on any but the mildest, best-drained site. Winter wet rather than winter cold is what kills globe artichokes, and a mulch that sheds rain matters more than one that insulates.
  • PruningCut the old flowered stems down to the base after cropping, and remove any dead foliage in spring. The plant looks dead in March and usually is not.
  • PropagationNamed artichokes do not come true from seed, so plants are increased by taking offsets in spring. Cut a rooted side shoot away from the parent crown with a sharp spade, keeping as much root as possible and a few leaves, and shorten the leaves by half to reduce the demand on those roots while it establishes. Replace plants every three or four years, because cropping falls away as the crown ages.

  • When it is readyCut the bud while the scales are still tightly closed. Once they begin to open it is inedible — though the flower that follows is spectacular and good for pollinators, which is a reasonable thing to do with the surplus.
  • How to pick itCut the head with secateurs taking about 15 cm of stem with it, starting with the king head at the top of the stalk — removing that one brings the smaller side heads on. Cut while the scales are still tight and closed against the bud; once they begin to open the choke inside has gone fibrous and the head is only ornamental.
