Replace the wood that has just fruited with the young shoot that will fruit next year, because a peach never crops twice on the same wood.
In spring, select a replacement shoot near the base of each fruiting shoot and rub out surplus buds. After harvest, cut the fruited shoot back to the replacement. Done consistently this keeps the fan furnished; neglected, the plant becomes bare at the base with fruit only at the extremities.
