Better in a pot than in heavy ground, and worth using loam-based compost with extra grit rather than a multipurpose, which stays too wet in winter. Raise the pot on feet so it drains freely, and expect to replace the plant every four or five years as it goes woody.

Growing it

  • PruningTrim after flowering, cutting only into growth that carries leaves. Sage, like rosemary, does not reliably reshoot from bare old wood.
  • PropagationTake semi-ripe cuttings in summer and replace plants every four or five years. Old sage becomes woody, sparse and much less productive.
  • WateringWater a new plant through its first summer while it roots out, and after that leave it alone — an established sage in reasonable soil is genuinely drought-tolerant and its grey felted leaves are the giveaway. In a pot, water thoroughly and let the compost dry appreciably between soakings. Sage kept damp turns yellow low down, sheds leaves and rots at the collar, which is the commonest way a good plant is lost.
  • FeedingSage does not want feeding and rarely benefits from it. The plant's real limit is age rather than nutrition: it goes woody, sparse and bare-legged after about four years whatever it is given, and the answer is a new plant from cuttings rather than fertiliser. A container sage will take a light top-dressing of fresh compost in spring and nothing more.
  • HarvestingPick leaves in any month — sage is evergreen and useful in January — but take the bulk of what you want between late spring and late summer, when growth is fast enough to replace it. Pick individual leaves or short sprigs from the outside of the bush, and avoid stripping one side bare, because sage regrows unevenly and a lopsided plant stays lopsided.
  • PlantingPlant in spring into full sun and the sharpest drainage available, setting the crown slightly proud of the surrounding soil so water runs away from the stem base. On clay, plant on a low mound with grit worked in, or grow it in a pot instead — sage in cold wet ground is a short-lived plant however well it is otherwise treated.

Where to make a pruning cutFour stems compared. The first is cut cleanly on a slope about five millimetres above an outward-facing bud, sloping away from it, and is labelled correct. The bud you cut to becomes the new shoot, and it grows in the direction it points — which is why an outward-facing bud opens the plant up and an inward-facing one crosses the middle.
