Beta vulgaris
One of the most forgiving root crops: quick, tolerant of ordinary soil, and usable at any size from golf ball upwards. Two things are worth knowing. The leaves are as good as chard and are usually thrown away. And most beetroot 'seed' is a cluster of several seeds, so seedlings come up in bunches and need separating whatever the packet suggests.

Growing it
- SowingSow 2 cm deep, two or three seed clusters together, and thin to the strongest. Soaking the seed for an hour beforehand speeds up an otherwise slow start.2 cm
- ThinningThin early. Most beetroot seed is a multi-seed cluster, so several seedlings appear where one seed went in, and left crowded they produce a knot of small roots rather than one good one. Monogerm cultivars are the exception.
- WateringKeep evenly moist. Irregular watering produces woody roots and, in some cultivars, white rings inside them.
- HarvestingTwist off the leaves rather than cutting them close, and leave the taproot intact. Beetroot bleeds heavily from cut surfaces.
